A few months ago, I invested in a good blender to replaced my blender that moved out. ;) About two years ago, my BFF introduced me to green smoothies that actually tasted good and I was ready to get back on that bandwagon. I love being able to drink a tasty shake, but actually be absorbing the healthy goodness of spinach, kale and other green stuff.

When the blender arrived, there was a booklet inside that included a recipe for blender ice cream. Now, I have a child who is obsessed with ice cream. OBSESSED. If I allowed it, she would eat ice cream at every meal and two snack in-between. She asks me for ice cream on a daily basis. I am constantly trying to encourage healthier options (frozen yogurt, no sugar added, etc.), but I usually feel like it is a losing battle.

It’s so nutty to me, too. She is unlike most kids in that she isn’t really that “into” sweets. She never sneaks treats. She has never had a cavity. She doesn’t ask for or get most candy. She never drinks sugared drinks – ever – and prefers water, to the surprise of every adult who offers her soda. But do not stand between her and a bowl of ice cream.

Naturally, she was looking over my shoulder when we got the blender, saw the recipe and insisted we try it IMMEDIATELY.

I was skeptical. I figured if homemade ice cream were so easy, everyone would have been doing it a long time ago.

As it turns out, it is pretty darn good. Delicious.

And, guess what? You control the sugar. YAY! You can make it with honey, maple syrup, agave, stevia or artificial sweetener, too. I actually have excellent success making it with half a banana added and no sugar at all. Most frozen fruit is naturally sweet, having been frozen at their peak. So, the banana gives it another boost of sweetness and creaminess.

I have tweaked the recipe in the 10,000 times we have made it in the last few months. And I think it’s easy to add a little more or less of something. You can’t screw it up.

Blender Ice Cream

For a single serving or just enough to share with your mother, when she insists you give her a bite.

Ingredients:

  • 1 cup of your favorite fruit
  • 1/2 banana (optional)
  • 2-4 tablespoons of cream or half and half (or any milk, but cream really makes it tasty)
  • Sweetener of choice – or not
  • Dash of vanilla extract
  • 2 cups of crushed ice (My turbo blender will work with whole ice, but I find the ice cream gets too cold and “sticks” the blender before it is a good consistency. So, I used pre-crushed ice, which works perfectly every time.)

Instructions: Throw it in and whirrrrr. If it gets too thick for the blender to blend, add a splash of milk or water – cream will just keep making it thicker.

This makes a really great consistency soft-serve. I’ve read that you can pop it in the freezer for a firmer consistency, but ours has never made it that far.
